In a cast iron, or any other oven safe pan, fry the bacon until crisp. Discard all but a teaspoon of grease. Season the salmon with salt & pepper and fry on medium for 2 minutes in the bacon pan. Flip and fry on the other side for another 3 minutes. Transfer the pan into a 425˚ oven for another 3-5 minutes depending on the thickness. At the same time, on another rack in the oven, toast the pretzel loaf, cut in half and drizzled with olive oil, until golden. Assemble the sandwich.
